I saw a friend on Facebook talking about her experience with a low-carb diet, specifically, keto. It was like a switch turned in my head, and I decided to commit fully to it. My total weight loss is 55 pounds, and I’ve gone from a size 16 to an 8. My HbA1c is 4.7 (down from 5.5), so I am no longer pre-diabetic, and both my iron and ferritin levels have fallen within a normal range. Additionally, my CRP readings, a marker of inflammation, have gone down. I no longer nod off during the day, and my overall anxiety has diminished. I feel healthy and strong, and have no desire to ever go back to eating starchy foods. I also do not crave foods unless my body needs them– and when I do, it’s usually because I’m missing something important (I occasionally crave liver products). I can now trust my body’s hunger cues and know that my brain isn’t being short circuited by false signals.
